Summer Menu | 9/7 – 9/9
Oats
· Enjoy oats cold, room temperature, or heated.
· To heat, place in a sauce pot, add 1/4c of milk, non-dairy milk, water, or liquid of choice to each serving of oats. Heat over medium low heat, stirring frequently until heated through. Add more liquid as necessary or until desired consistency is reached.
Breakfast Bagel
· Preheat oven to 350.
· Place foil wrapped bagel on a sheet tray and bake for 20 minutes or until the internal temperature reaches 140 degrees F.
Lemon Dill Dijon Roast Salmon. Greek Yogurt Sauce
· Preheat oven to 350.
· Place swiss chard and rice in an oven safe container, cover container with foil, and bake for 20 minutes or until heated through to 140 degrees F. *For low carb version, do not cover container with foil*.
· Place fish on a sheet tray or oven safe container, bake for 15 minutes or until the internal temperature reaches 145 degrees F. Avoid over cooking.
· Plate fish and sides, Enjoy sauce with salmon.
Honey Garlic Glazed Chicken. Broccoli & Sweet Potatoes
· Preheat oven to 350.
· Place chicken, broccoli, and potatoes or zucchini in an oven safe container, cover with foil and bake for 15 minutes, uncover and bake 10 minutes or all elements are heated through to an internal temp. of 140 degrees F.
· Heat sauce in a small sauce pot over medium low heat until hot. Keep warm.
· Plate hot entrée and enjoy sauce with chicken.
Enchilada Bake| Beef, Black Bean & Mushroom, or Vegan
· Preheat oven to 350.
· Place enchilada bake & zucchini in an oven safe container, pour extra enchilada sauce over enchilada bake, cover baking dish with foil and bake for 25 minutes or until heated through to 140 degrees F.
· For Vegan version, heat “cheese’ sauce in over low heat in a sauce pot until just heated through. If sauce is too thick, add 1tb of water at a time until desired consistency is reached. Take care not to boil or scorch sauce.
· Plate enchilada bake and zucchini enjoy bake with provided sauces!
Lemon Garlic Steamed Broccoli
· Preheat oven to 350.
· Place broccoli in an oven safe container, cover with foil and bake for 15 minutes or until heated through and desired doneness is reached.
Roast Sweet Potatoes
· Preheat oven to 350.
· Place potatoes in an oven safe container and bake for 15 minutes or until heated through to 140 degrees F.
Skillet Seared Salmon
· Preheat oven to 350.
· Place salmon on a sheet tray or oven safe container. Bake for 12-15 minutes or until cooked to 145 degrees F.
Skillet Roast Chicken
· Preheat oven to 350.
· Place chicken on an oven safe container and bake for 15 minutes or until heated through to a minimum of 140 degrees F.
Oven Braised Chicken Leg
· Preheat oven to 350.
· Place chicken in an oven safe container, cover with foil, and bake for 15 minutes or until heated through, tender, and the internal temperature reaches 140 degrees F.
Chicken Wings
· Preheat oven to 350.
· Place wings on a sheet tray or in a skillet and roast for 15-20 minutes or until heated through to a minimum of 140 degrees F. Remove from oven, place in a bowl, and toss with provided sauce.
